Stuffed Crocodile Fillets

Ingredients:

2 225g/8oz crocodile fillets
|
| > |
225g/8oz cooked mixed long grain and wild rice
|
| > |
1 leek, finely chopped
|
| > |
2 courgettes, finely chopped
|
| > |
grated rind and juice of 1 lemon
|
| > |
a little butter
|
| > |
45/3tabsp balsamic vinegar
|
| > |
salt and ground black pepper
|

Method : |
1. Preheat oven to 200C/400F/gas mk 6.Season the crocodile fillets with salt and pepper.Mix together the cooked long grain and wild rice,leek,courgettes and lemon rind.
2. Grease an oven proof dish with a little butter and lay one crocodile fillet in it.Spoon the rice over the top.Place the other crocodile fillet on the top.Press together and tie them at regular intervals with a fine string to keep the stuffing in place.
3. Pour the lemon juice and vinegar over,cover the crocodile with a piece of buttered foil.Roast for 15-20 mins or until the crocodile is browned,tender and cooked through.
4. Remove the string and cut the stuffed crocodile into portions.Transfer to warm plate and serve at once.
